THE STORY
A twenty-cover dinner that began at ten in the evening. The brief was darkness: no overhead light, no centrepiece taller than a candle, and a menu that could be served slowly across three hours. The kitchen worked from a single galley behind a curtain.
STYLING
Black linen, smoked glassware, a single line of votives and nothing else on the surface.
GUEST EXPERIENCE
Twenty guests, one seating, service paced so that no course arrived before the conversation was ready for it.
